Campfire Cook: Nathan’s Roast Beef

Several months ago, my sister and her husband had us over for dinner. My sister’s hubby is an awesome cook and I always like to see what he comes up with. He served us a homemade roast beef and my sister topped it off with homemade bread. I asked for the recipe and after thinking about it for quite a while was finally able to get some actual measurement out of him. Usually he says, “Oh just a little of this and a little of that.” Yeah, makes it real easy to copy, huh?

I can’t be too harsh, because the older I get the more I find myself doing the same thing. I made some really awesome chili on Monday night, but heaven help me if you wanted to know the recipe. I can’t remember what I put in it!

Nathan’s Roast Beef

1  2-3 lb.  Sirloin Tip Roast or Bottom Round Roast (this is so much better if you can find a grass fed beef for this!)

1+ tsp pepper

1+ tsp salt

1+ tsp sugar

3 cloves garlic, chopped

Olive oil

Mix the spices and a little tiny bit of olive oil together to make a paste.

Rub the mix all over the roast.

Bake at 400 degrees uncovered for 15 minutes. Then cover and bake at 250 degrees for 1 -1 1/2 hours more. Let sit for 10-20 minutes and them slice the meat thinly for sandwiches or serve plain.

  1. Yum, this looks good! I’ve never made a roast beef. Maybe I’ll have to give this a go.

    I pretty much only cook by feel. Even if I want to try something new, I compare a few recipes and decide on a course of action. Usually it does turn out well, but there is the problem of never being able to make the same thing twice!
